Living in a motel is fertile ground for invention and creativity when it comes to food. After 13 years of moving and experiencing straitened circumstances we have learned to make the most of every situation. We won’t bore you with tales of ketchup soup or ramen noodle sandwiches but from time to time we will share some of our motel room creations here, like skillet pizza, slow cooker cinnamon buns, pulled pork, Boston baked beans, moussaka and other treats all made in a small space. When boredom, limitations and our sweet tooth recently collided the result was this delicious Skillet Fudge with Skor Bits.
This simple recipe started life somewhere on the Internet and with some creative touches has morphed into this post. It was a perfect fit for our small space and limited resources. The whole process takes minutes, can be made in a tiny space and the results are beyond fantastic. I would suggest getting all your ingredients ready beforehand as this fudge cooks quick and timing is very important. You will need an electric skillet, wooden spoon, a spatula, a timer and a 9×9 pan.
Skillet Fudge with Skor Bits
2 cups sugar
3 tbsps. butter
1 cup evaporated milk
1 cup miniature marshmallows
1 bag semi-sweet chocolate chips (1 ½ cups)
1 tsp. vanilla
½ cup Skor Bits plus ¼ cup Skor Bits
- Butter a 9×9 (or equivalent) pan and set aside. Set the timer for 5 minutes and have it ready to start.
- Set the skillet to 280° F and melt the butter. Add the evaporated milk and then stir in the sugar.
- Bring mixture to a full rolling boil. As soon as the mixture is light, frothy and bubbling start the timer.
- Boil for 5 minutes, stirring constantly. Time is critical here because if you do not boil the sugar mixture long enough your fudge will be gooey.
- Turn off heat. Add marshmallows, vanilla, and the chocolate chips. Stir until melted and well blended. Add the ½ cup Skor Bits and stir them in until blended.
- Pour the fudge into the buttered pan. Sprinkle the ¼ cup Skor Bits on top. Cool until firm.
You can substitute nuts for the Skor Bits if you wish. Allergies, preference and availability led us to use Skor Bits instead.
Since we only have a tiny mini-fridge in the motel chilling the fudge has been interesting. Being winter, we place the fudge in our car outside and hope the local thieves don’t take it. After 4-6 hours in minus Celsius temperatures the fudge sets up nice. We are not sure what will happen with warmer weather so we might need to get a Styrofoam cooler and ice.

🙂 I have been fasting (eat every third day) since January and feeling good! Hopefully will lose 40 pounds by end of March. Trouble with cooking such good food here is that we don’t get much exercise in winter and if we don’t fast we get fat…..quickly…..too quickly. 🙂

I’m so sorry to hear that you all are battling that unwelcomed flu, ugh! I’m also sorry you had to visit the hospital, but super super thankful that the Lord held and kept you from going under the knife. Whew! Thank You Jesus for intervening.
I oft wish there were adequate words to describe why the Lord permits trials. Even more so I wish there was a clock the Lord provided to us that had a countdown of when the seasons of intense testings would cease. This however does not remain to be the case and we must go through each day trusting unreservedly in the Sovereignty and Goodness of our Daddy.
As you all are on the mend, may He remind You always of His faithfulness, of His unconditional love, of His kindness that is unending to those who place their trust in Him.

Skor is the name brand of a caramel and chocolate candy bar we have here in Canada. The Skor bits is a bag of just the hard caramel bits. They add a bit of caramel taste to the fudge making it even sweeter than it should be. 🙂
I am sorry to hear that our website wasn’t downloading on your phone. I did some investigation and I think it had to do with my cache. I do think I was able to fix it but can’t be sure until someone tries it.
